Coconut Almond Bon Bons ( V + GF )

I've been making coconut bon bons for many years - I even made them as party favors once for a friend's wedding. The first recipe I followed was loaded with powdered sugar and condensed milk. Of course, they were really delicious, but very high in empty calories. Today's recipe I developed is ridiculously simple, and has much more wholesome, nutritious ingredients.
Coconut Almond Bon Bons make a fabulous gift for Valentines day and are sure to impress your loved ones, whatever the occasion. You can even try swapping out the almond meal for hazelnut flour, for a different but equally delicious filling.
Above are tools that you can use for dipping things in chocolate. They are great, but if you don't have one a fork will do just fine. I like using a dark chocolate because it balances out the sweetness of the filling. Anything over 60% is great.
Ingredients:
- 2 cups Unsweetened Shredded Coconut
- 1 cup Almond Meal or Hazelnut flour
- 1 cup Brown Rice Syrup
- 200 grams Semisweet Chocolate
Method:
- Add coconut, almond meal and brown rice syrup to a medium bowl.
- Using an electric mixer, blend until all ingredients are thoroughly combined.
- Roll coconut filling into little balls in the palm of your hands, and place them onto a baking sheet lined with parchment paper - evenly spaced. Note: If the filling is too tacky to work with, add more coconut or put it in the fridge until it becomes easier to handle.
- Place the filling balls in the fridge so they have the opportunity to set. About 15/20 mins.
- Using a double boiler, slowly melt your chocolate.
- Take set filling out of the fridge and dip them into fully melted chocolate one by one, making sure they are evenly coated.
- Place your chocolate dipped bon bons in the fridge so they harden and set.
